Now that I'm just about 8 months into my keto diet and just about at my goal, I've started to vary my menu a bit more(still keeping it keto) but since I feel so comfortable now with food, I am ready to add in some more foods and increase my daily carb intake (started at 20/day and now am at 25 net carbs/day). I eat a bit more veggies and enjoy dark chocolate bars more often (portion control of course).

I've gotten busier with my work schedule so am going to try posting here only and on my main rae clevett facebook page. So I'll include all the bits and pieces of my life here (keto, animals, food, scrapbooking, tv stuff, photography, etc). It feels good to simplify things.
I had a wonderful time wandering around the park for a few hours from late afternoon to dusk. I hadn't been to QEP for many years, the last time was with my mom who has since passed away and it brought back a lot of memories. She would have been enchanted with the variety and beauty of the gardens. The last time we went, the park wasn't in the midst of its glory and the flowers were wilted and faded. It was a day to remember. I got so many awesome photos to scrapbook with.
I've been able to keep up with the Scrapaneers MOS Tournament and it's been a blast so far. It's been challenging me to step out of my comfort zone which is scary but fun too.
I'm in a shopping mode now, replenishing my wardrobe after almost a 50 lb weight loss. I'm looking for sales and deals everywhere and am so thankful that I'm finding lots to buy at decent prices. This wkend I'll be bringing clothes to the consignment store in Bellingham.

Didn't get a chance to try out any new recipes this week but I have been perusing pinterest looking for keto friendly recipes. I did come across a DIY idea for a scarf hanging rod which I need b/c I have a lot of scarves and it's always a hassle to dig through the bin for one. I need them hung up where I can easily see what I have. Of course, when I get it up and put all my scarves on it, I'll take a pic of them and scrap a page about it.

I'm happy to say that the bit of rain we had cleared the smoky air and the birds have come back to the feeder. We missed seeing our little fluttering friends flying around the feeders throughout the day. The woodpeckers, flickers, sterling jays, chickadees and sparrows came back first but then the hummingbirds came back the next day. I just love to watch these little guys come to the feeder. They are so tiny and move so quickly!
As for my personal life, I'm happy to say I've been able to maintain the ketogenic diet lifestyle and it's both the easiest and hardest diet I've ever been on. It's easy in the sense that I don't have to count calories, don't have to figure out anything other than paying attention to how many carbs I consume daily. I eat when I want, have figured out what snack foods I like, have a binder of fave dinner recipes to choose from and add in enough healthy fats to keep me feeling satiated. I no longer crave food, don't eat at night b/c I really don't care to, other than the occasional piece of dark chocolate or some almonds and am down over 45 lbs. I think another 5 or so pounds will be where I want to maintain (will eat a bit more healthy fat to prevent any more weight loss). I still haven't put together a weight lifting program but have been outdoors walking a lot more and doing planks and squats occasionally with a bit of pilates but basically, not much exercise yet. Just been too busy with everything else.
Things will quiet down, as we get to the end of summer, (can't believe it's August already) and I'll be posting more about scrapping, keto, exercise, photography and more! Stay tuned.
The summer is flying by, what with me being busy on my digital CT teams, getting outdoors and enjoying the endless days of sunshine we're having on the west coast (which almost never happens), reading lots of books and having lots of desk work as I've been covering for the other gal a bit here and there. So, time is going at warp speed, which is why I've neglected my blog a bit lately. Sorry, folks!
We had Beckham with us at the trailer this past wkend and he loved it (poor guy is getting chemo treatments right now, after his leg amputation, and is tired so wasn't up for any long walks but he sure did enjoy just lazing around on the patio and deck at the ranch. On Saturday, we stayed outdoors pretty much the whole day and he happily snoozed and then trotted around the yard, smelling everything. This was his first time out to the ranch this year.
Keto-wise, I am doing well. I'm now over 40 lbs gone, feel great and am getting really comfortable with my eating habits. I have a few faves that sustain me when I'm busy or on the road (Oberto's pepperoni sticks, cheese crisps, bullet proof coffee) and at home have been making lots of salads, coleslaw, deviled eggs and BBQ chicken and beef. My new fave topping for chicken is leftover artichoke and parmesan dip. I eat it for a few days with green pepper strips and by that time I've had enough of that snack so finish off the dip for a meal or two by using it as a topping for baked chicken and/or steamed/baked cauliflower. YUM!
I've been digi scrapping (always find time for that). Here's a few pages I've created this past week or so.
I'm still slowly dropping the inches and weight. I'm feeling really comfortable with my eating plan and still marvelling at the lack of cravings and binging like I had in the past before switching to a keto lifestyle.
This weekend I am going to try making parmesan crackers so will post more on that later. I think they will pair well with pepperoni or other meats and might be a good addition to a salad.
Made my first batch of homemade mayo and while it tastes different than Hellman's Mayo, it's not different in a bad way, just a bit of a different flavor. I am going to experiment with adding in stevia, vinegar and a few spices. But, overall, I am really happy with it and thrilled that I am not consuming any unhealthy oil (the recipe is made with light olive oil).

I'm dealing with computer problems (again) and haven't been overly productive this week with scrapping. But here's a spring page I created with the new May Mixed Media Monthly kit from The Lilypad. I can't wait for more flowers to bloom and get out for a fun botanical photography photowalk soon. It's finally starting to warm up a bit with at least a few days of dry weather but holy moly....BC weather has just sucked this spring so far. Hope that on an upward change now.
